Brunch couldn’t be easier with our Avocado Toast. Yes, it is having a moment at hipster cafes and coffee bars, but there’s a reason it’s well played. Several in fact. Avocados are incredibly healthy, deliciously creamy, and help make short work of breakfast. This is almost a no recipe, recipe- easy enough for kids or for those less confident in the kitchen.
We make ours special by adding a little kick of flavor… using one of our favorite spices, smoked Spanish paprika. Together with fresh rosemary and a little squeeze of lime juice, your avocado toast just got elevated. Serve with some fresh fruit and a glass of rosé, and Mom will smile all morning.
- ½ ripe avocado a whole one if it’s small
- 1 thick slice good quality artisan bread
- 1-2 lime wedges
- Fresh rosemary about a half of a small sprig
- Smoked Spanish Paprika
- Flakey Sea Salt such as Maldon
- Freshly cracked black pepper
- Extra virgin olive oil

Toast the bread. Scoop out the avocado and place it in a small bowl, mashing slightly with a fork or back of your spoon. Smear on the bread and place on your plate.

Chop a little rosemary and sprinkle it on the toast, followed by a sprinkle of smoked paprika and sprinkle of sea salt, then some freshly cracked black pepper. Drizzle with a little olive oil, and serve with the lime wedge.
