Spicy Shrimp Ceviche

  • ½ pound cooked shrimp peeled and chopped
  • ½ small white onion chopped
  • ¼ cup diced cucumber
  • Zest and juice of 1 lime
  • 1 serrano chili minced
  • ¼ cup cilantro chopped (can substitute fresh oregano, but use half the amount)
  • ¼ cup diced mango optional
  • 1 ½ tablespoons rice wine vinegar
  • Tortilla chips for serving
  1. Combine all ingredients in a serving bowl, add salt and pepper and taste for seasoning. Can be made a few hours ahead of time. Serve with your favorite tortilla chips.
